From continental dining, to fresh seafood and shellfish, to traditional Mayan cuisine, Cancún offers a truly dazzling assortment of dining options. There are over 200 restaurants; settings range from fast-food to casual bistros, to elegant theme restaurants.
Overall, dining in town tends to be less expensive than dining in the resort zone. Many hotels have excellent restaurants and offer cuisine of enormous variety. Note that a recent wave of competition (hotel restaurants competing with non-hotel eateries) has brought down dining prices. Fast food outlets are plentiful.
Do not miss trying some delicious local Mayan dishes, such as Huevos Moltulenos, Cochinita or Pollo Pibil, and Sopa de Lima. A fun way to start your evening is to "hotel hop," taking in several excellent happy hours, a variety of live music, and some incredibly beautiful settings.

Tips:
Mexicans consider it the height of rudeness to bring the check before it is requested. So, when you are ready, ask for your bill by saying, "La cuenta, por favor." The average tip in the hotel restaurants and bars is 15% if the service was good. Always check the bill to be sure the tip ("propina") is not included in the check. Since it is difficult to exchange U.S. coins to pesos, use only bills (U.S. or pesos) or Mexican coins when tipping.

Is it Safe to eat and drink?
The restaurants located in the tourist areas serve food on the same guidelines as the FDA regulations in the USA. They use purified water to make ice and drinks.

SEARRED HUACHINANGO
Ingredients

Preparation and service:

Season the snapper fillet with salt and pepper.
Using a non-stick skillet sear the snapper fillet skin side first till crisp. Set aside and keep warm.

POLENTA
Ingredients

Preparation and service:

Heat the olive oil in a large pot
Add the onions and saute till transparent about two minutes.
Then add the polenta, be sure to stir and coat the polenta with the olive oil.
Working with a whisk, quickly stir in the stock stirring constantly for one minute.
Place the entire pot into the oven at 350 for five minutes. Remove and stir.
Return to the oven for two minutes longer. Remove and quickly stir in the cheese and salt.
Pour the polenta into oiled coffee cups or into small cake pan. Cool till set.

MANGO SALSA
Ingredients

Preparation and service:

Place all of the ingredients into large bowl.
Adjust the seasoning with salt and pepper.

BEURRE BLANC

Preparation and service:

In a medium sized saucepan place the first 7 ingredients.
Over medium to high heat reduce till almost all the liquid has evaporated.
Then add the cream and mango.
Reduce the cream by half.
Slowly whisk in the butter.
Strain through a fine sieve.
Season to taste with salt and pepper.
